Van Xuan offers a sampling of Vietnamese cuisine in an elegant, wooden décor. A traditional band adds to the ambiance. A quick glance finds mostly foreign business diners entertained by their local hosts. The food is quite refined. Recommended dishes include tender squid sautéed with a variety of vegetables, large shrimp boiled and served with a tangy, mustard mayonnaise, a whole catfish brought to the table still sizzling over a propane flame, and a rich green bean, flan-like dessert.
