This week long festival commemorates the Hebrews' escape from slavery in Egypt. The festival is celebrated by eating Matzah (an unleavened bread) and eliminating products with yeast from the diet. This symbolizes the fact that the biblical Hebrews fled so quickly, their baking bread did not have time to rise. Rigorous spring cleaning is undertaken before the festival. On the morning before the festival begins, religious Jews make bonfires out of whatever crumbs and forbidden food they have found. The festival's first night is marked by a service in the home called the Seder where families recount the story of leaving Egypt. For the entire week, bread and yeast products are unavailable from West Jerusalem stores. Many restaurants will close down or offer a different menu. Festivities are held throughout the city.
