Úlfar's effect on Icelandic seafood cuisine has been considerable, and has in turn influenced and inspired the rapid increase in the country's culinary delights. This has meant a shift from the idea of traditional Icelandic food' and Icelandic specialities as a Viking banquet, low on spice and heavy on simplicity, to more adventurous and imaginative creations, making the most of the fine Icelandic seafood, organic lamb, whale, game and wild fowl. While all of these are perhaps not available at Úlfar's, his mainly seafood-based restaurant has maintained a high standard, and is always popular amongst natives and foreign visitors.
