Saint Sebastian’s Day, January 20th, is a joyous day of one-of-a-kind treats and surprises. At midnight on January 19th, the whole city congregates in the plaza de la Constitución (Constitution Square) awaiting the mayor's raising of the city's flag to the beat of the "San Sebastian March." Thus begins a 24-hour non-stop party. The Tamborrada is a big marching procession, whose drummers are dressed in chefs' uniforms. The drumming processions continue until midnight of January 20th when the flag is lowered in the plaza de la Constitución. Saint Sebastian’s Day is the ideal time to visit the gastronomic societies because it is the only time of year they open their doors to the public.
