The cooking is traditional Viennese with some lighter touches. Drei Husaren is most famous for its trolleys of carefully composed hors d'oeuvres. The rolling carts feature a range of more than 35 items including such dishes as calves' brains on a bed of spinach with a light mustard sauce.
